The Mara X is a heat exchanger — one boiler handles both brew and steam. The Bianca V3 has two separate boilers and a flow control lever, giving you independent temperature control for each function and the ability to manually adjust water pressure during extraction. If you want more control and precision, the Bianca V3 is the step up. If you want simplicity and great espresso at a lower price point, the Mara X is the better call.
The Bianca V3 deserves a grinder that can keep up with it. We recommend the Eureka Specialita as an entry point, the Eureka Oro XL for a significant upgrade, or the Eureka Atom W 65 for grind-by-weight precision. The flow control paddle sits on top of the E61 group head. By adjusting it during extraction, you can control how much water flows through the puck at any given moment — pre-infuse at low pressure, ramp up slowly, or restrict flow for a longer sweeter extraction. It's an advanced feature with a learning curve, but once you dial it in the results are exceptional.
The Bianca V3 takes approximately 20–25 minutes to fully stabilize both boilers. Most users set a smart plug timer so the machine is ready when they wake up. The dual PID ensures both boilers are at exact temperature when you start pulling shots.
